The price quoted to you (per pound) includes the meat and
services and is weighed before being cut.
You, therefore, ARE paying for the cutting loss, fat, and
bones being thrown away.
In most cases, the cutting loss is approximately 30% of the
total weight.
Prices do change daily, but you are protected with a price
quotation.
Price includes cutting and wrapping; no charge for flash
freezing.

included with carcass weight.
